Value tables and rate of change
The value tables below represent processes in which milk was heated or cooled
at a constant rate in experiments intended to examine the
effect of the rate of temperature change on the nutritional
qualities of milk.
Although in all the experiments the
measurements were taken at regular time-intervals, these intervals were
different in each experiment (every minute, every minute and a half, and
so on).
